And it's easy to make:
First, heat a tablespoon (20 mL) of olive oil in a large pot. Add one large thinly sliced carrot, one small diced onion, and a clove or 2 of garlic. Cook for a few minutes, until softened.
Then add:
- 3-4 cups (250 mL) of broth. (I used canned concentrated beef broth plus vegetable stock for added flavor)
- 1/2 cup (125 mL) of tomato salsa, tomato, or a tablespoon (20 mL) of tomato paste.
- 1 cup (250 mL) each of chopped cabbage and chopped spinach
- 1/2 teaspoon (2 mL) - or more - each of dried basil and oregano
Bring to a boil and cook for 15 minutes (or longer).
If desired, add a cup (250 mL) of chopped zucchini and cook for another 5 minutes before serving.
