I’ve been eating a lot of hard boiled eggs this summer. Eggs with hummus, salad or simply tomatoes makes a simple, light meal.
My mother used to say: Eggs and milk are perfect foods. Alone they sustain young life ... (Think birds and mammals.)
It has taken me a long time - till this summer, in fact - to learn how to properly prepare hard boiled eggs.
How long to cook them?
A useful egg cookbook said to bring them to a boil, remove from heat, cover them and let them sit for 20 minutes in the hot water before pouring it out and replacing it with cold water.
That seems to work.
Another challenge: how to peel them without mangling them?
One trick I learned recently was to BREAK THE SHELL ONLY AT THE ENDS. This makes makes removing the whole shell a lot easier!
