I recently posted a blog on microwaved mini cakes using a simple one-bowl chocolate cake recipe that is a favorite of mine.
I was so pleased with the result that I tried making microwaved banana bread mini cakes as well, using the simple one banana muffin recipe I posted a year ago. I thought of adding chocolate chips - which would have tasted good - but added half a cup of frozen cranberries instead. A tangy touch! (Next time I'll add a cup!)
I microwaved three containers at a time - first on high for a minute, then on 30% power for two minutes, testing with a toothpick.
Again I was pleased with the result.
