Storing Eggs

A month ago, I took a class in painting an icon using egg-tempura paint, made daily by the instructor... I've never used the medium before.

To our surprise, the instructor didn't store his eggs in the fridge.

Fresh eggs don't need to be refrigerated, he told us. They will keep up to four weeks at room temperature...

I didn't know that!!
