Celery adds so much flavor to soups and stews, but I rarely eat it fresh, so I don't usually keep it on hand.
I recently bought celery and only needed one stalk. Not wanting to waste it, I chopped it up and cooked it all in a little water.
I then divided it into several freezer containers - to have on hand when I want to add it to a soup or stew.
I've also tried chopping celery and freezing the chopped pieces, uncooked, which I do for chopped red and green peppers. But for celery I think I prefer cooking and then freezing it.
