The other day, leafing through some of the recipes in The South Beach Diet Supercharged, I found the recipe on page 239.
All you do is peel and chop two large cucumbers - removing seeds. Add them to a mix of:
- 1 cup of yogurt,
- 3/4 cup of cold water,
- 1 tablespoon lime (or lemon) juice

Then add:
- salt and pepper to taste
- 1/4 cup fresh mint, chopped (I added a generous tablespoon of dried mint instead)
Let the soup sit in the refrigerator for a few hours before enjoying it.

(It tastes delicious the next day, too!)
