Cold Cucumber Soup

I've discovered an easy soup recipe, perfect for a hot summer day - cold cucumber soup. One of my neighbors often gives us cucumbers from his garden. They're big - and we have a hard time eating them as quickly as he leaves them at the door!

The other day, leafing through some of the recipes in The South Beach Diet Supercharged, I found the recipe on page 239.

All you do is peel and chop two large cucumbers - removing seeds. Add them to a mix of:
  • 1 cup of yogurt,
  • 3/4 cup of cold water,
  • 1 tablespoon lime (or lemon) juice
Puree until smooth...














Then add:
  • salt and pepper to taste
  • 1/4 cup fresh mint, chopped (I added a generous tablespoon of dried mint instead)
That's it! It's so easy!

Let the soup sit in the refrigerator for a few hours before enjoying it.














(It tastes delicious the next day, too!)
